Food Inspiration

I’m going to keep things short and sweet today. I’ve just started a two week contract at the National Archives in Waltham, MA. digitizing files and prepping them for an exhibit. I really like the work, but the commute is an hour (or more!) each way so by the time I get home (around six or seven pm), I am fairly brain dead. Lucky for me, I have a very nice boyfriend who makes delicious meals that are sometimes waiting for me when I walk in the door. He could be doing this out of the kindness of his heart, or as an act of self preservation because he knows that after an hour and a half of driving in traffic, I’ll be less cranky if fed immediately  (like a gremlin!).

Below are some of our most recent favorite recipes:

Wisconsin three-cheese flat bread / Garlic roasted chickspeas with feta and mint / Cous Cous and feta stuffed peppers / Cheesy quinoa cakes with roasted garlic and lemon aioli / Spicy tai tofu with red bell peppers and peanuts
