Recipe: Good Old Fashioned Pancakes

These are the best pancakes I’ve ever had that aren’t from a box. They are super fluffy, easy to make and if you add chocolate chips a definite crowd pleaser. Be sure to make them small though, if you spoon them out too big they aren’t as good- trust me, I’m the pancake queen. Perfect for Saturday mornings.

Stuff You’ll Need:

  • 1 and 1/2 cups flour
  • 3 and 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 and 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter
  • a dash of vanilla (that’s my little addition- just a small splash, not too much)

If you so wish, add chocolate chips. I usually do it after I spoon the batter onto the piping hot griddle, sprinkling the chocolate on top of the gooey mound and then flipping them once their ready. This way you get enough chocolate chips in all of your pancakes.

How To Do It:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

and voila! You have wonderful homemade pancakes. Now you can impress everyone you know.
